Healthy Food? GROSS!!!!

I’m currently on a mission to find healthy foods that are fun (and fast!) to cook or prepare, and that won’t make me associate eating healthily with, well, cardboard and its other bland, equally-lacking-in-personality  family members (mushy paper, shredded files…there are ALL KINDS of paper products that bear an uncanny resemblance  to health food!).

The inimitable Ree at Confessions of a Pioneer Woman has given me a few ideas, such as this DELICIOUS looking summer stir-fry.  Mmmmm, garlic shrimp.

Mmmmmmmmmmmmmm.

What was I saying?

Right.  When I was in DC last weekend, I attended a barbeque at the home of my girl SDH’s family, whose parents have lovingly embraced their new-ish status as empty nesters by becoming, well, gourmet chefs.  There’s really no other way to put it.  Anyway, aside from grilled chicken and ribs that made me want to straight up move into one of their newly vacated bedrooms, there was this salad.

And oh, what a salad it was.  Corn, black beans, avocado and mint (I think?), oh my!  The point being, I haven’t had a chance to get the recipe from the chef herself yet.  YET.

But when I do, I’m going to make it.  Oh, will I make it.  And I will photograph it.  I will photograph it, and I will post it here, and then all of you can salivate/go rush to make it yourselves, even if you’re in the middle of something vaguely important like the workday, a funeral, blah, blah, blah.  There’s always an excuse.  Don’t be that guy, okay?

If you don’t yet know about Food Porn, well first of all you SHOULD, and second of all, this will totally be achieving that kind of status.  Sexy food.  Sexy salad.  Sound like a stretch?  (For those of you who aren’t familiar with Food Porn, these pictures are totally workplace appropriate.  I promise!  No promises as to what they may do to you if you’re hungry, though.)

Wait, are you doubting me?  You really shouldn’t.

So, any suggestions from you healthy eaters (shudder) out there?  Ways for me to incorporate veggies and whole grains into my diet that aren’t accompanied by unthinkable quantities of olive oil, salt and cheese to mask any potential health benefits?  Do tell!

  1. garlic and olive oil make anything taste good, and olive oil has the good kind of fat in it. i think whole wheat pasta is kind of gross, but i like the taste of brown rice. they make whole wheat couscous, which is yummy and cooks in 5 minutes. as for vegetables – seasonal and simple! does this help? i hope so.

    Unsung healthy snack: Kale chips. So easy to make and delicious to eat.
