Zen and the Art of Pizza Making

[DISCLAIMER: The title of this post could potentially fool one into thinking that there is a pizza recipe somewhere in this post.  And if one was thinking that, one would be wrong.  I will say that pizza doesn’t really require a recipe – you just put sauce and ingredients on the dough and bake it.  So if that’s what you were looking for, you are very, very welcome.]

This weekend has been an amazing, refreshing, restorative few days comprised of delicious food, amazing friends and beautiful weather.  Not gonna lie, it was pretty satisfying to type that last sentence.  ‘Cause it’s true!

We were graced this past week by the presence of Snuggles, one of our BFFs from college, and his buddy, Tall D.  The two (very smart!) boys took a much-needed break from East Coast work and humidity (yuck!) to come bask in the Colorado sun for a few days, and we took good care of them – the not-so-secret part was, we LOVE having visitors and they took care of us just as much in that sense.

Notcho Grandma’s Chicken

[How would you like to breathe THAT when you walk outside of your house?]

Actually, it is.  I’m going to share a family secret with you today.  Don’t tell nobody!  Actually, do.  It’s a pretty delicious secret.

But first of all: Boulder has been in the news this past week, and unfortunately it’s not for very happy reasons.  We’ve had some wicked wildfires going on just to the west of downtown Boulder, right over the Flatirons (the foothills here) and unnervingly close to our apartment.  It’s a major bummer – over a hundred homes have burned down at this point, and authorities are saying it’s probably going to take another ten days or so to contain the fires.  Also, this town smells like a damn bonfire.

No Labor Allowed!/I’m Sorry.

Happy Labor Day Weekend!  Okay, now that’s out of the way.

When I first started writing this blog, I did two things.  I a) apologized in advance for what I was sure would be a failed experiment in trying to post regularly, and I b) made that apology look unnecessary by posting virtually every day for like a week.  Like it was all a dirty lie.

Well, listen.  I’m trying, OK?  Every once in a while (read: very often), life gets in the way and I just don’t feel quite interesting enough to be pushing my life/thoughts/photographs/recipes/jokes on other people.  However, I’ll try to include a little bit of all of those in this post to make up for it.  While still keeping it short, because let’s face it, I’m TIRED.

Mmmm…Thai Green Curry

So, here’s the deal: when one moves to Boulder, something happens where one all of a sudden starts craving organic fruits and vegetables.  It’s like a disease, only you get more healthy.  But the weird thing is, I’m lying, and the reality is that you basically HAVE to buy organic fruits and vegetables here.  You have to make more effort to find NON-organic, and who wants to make an effort?  Exactly.

Not-So-Mystic Pizza

I love the ocean.  You might not believe me since I voluntarily moved to a landlocked state, but I really do.  Learning to scuba dive several years ago was such an eye-opening experience in terms of my love for the ocean – getting a feel for hanging out in the ocean’s most intimate environment (I really didn’t intend for that to sound creepy, but okay) was so incredible and inspiring.  It was definitely a jolt to the senses when, after a totally unreasonable lifetime fear of sharks, the first thing I saw after my lengthy trip down the anchor line from the boat wasn’t a fun manta ray or a majestic lionfish but a shark, just chillin’ on the bottom.

My point is, I went to Mystic Aquarium in CT last year during my spring break (when that still existed), and it was pretty awesome.  Not as awesome as scuba diving, but still pretty awesome.  So, here are some pictures.  I had a pretty sweet experience with a beluga whale involving it coming right up to the glass where I was standing and mimicking the way I was turning my body!  Somewhere in the world, I have a baby beluga friend.
